Delicious Carrot and Orange Soup Recipe : For The lonely Heart

Serve 6(230kJ(55Cal)per serve


2 teaspoons polyunsaturated oil
400 grams carrot chopped
1 large onion chopped
juice of 2 orange
2 teaspoon grated orange rind
1 liter chicken stock
1 cup chopped celery
1 teaspoon curry powder
1 crushed clove garlic
freshly ground black pepper
6 tablespoon non-fat natural yogurt
6 thin slice orange
spring of mint to garnish


Heat the oil and add carrots, onion and celery. Cook gently for 10 minutes, add the juice, rind, stock , curry powder, garlic and pepper. Simmer for approximately 10-15 minutes until carrots are just tender. Blend. Serve hot or chilled with a spoonful of yogurt. Garnish with a thin slice of range and spring of mint.
