I just saw this recipe in one of my BF’s recipe book in there house. His mother is a great cook (according to him) and always the one preparing food for them ever-since. And his been encouraging me to eat tofu because It is high in protein, low in saturated fats and a good source of calcium as well as vitamin E. It is also cholesterol free (according to him), I’m not into health conscious or health food stuff as long as it’s edible and I like the taste it’s fine with me unlike my BF who is very strict about what food he eats. Just sharing the good stuff in life. A delicious and healthy food for you and your family and it’s affordable.
Sweet and Sour Tofu:
250 grams tofu (soy bean curd) cut into 2.5 cubes or depends what size you like.
1 tbs polyunsaturated oil or depends on what kind of oil you like.
1 quantity or amount sweet and sour sauce
Saute tofu in oil in frying fan until golden brown. Stir in sweet and sour sauce, reheat. Serve with steamed brown rice or what rice you want.
Sweet and Sour Sauce:
1 red bell paper cut into thin strips 2 carrots cut into thin strips
150 grams snowpeas (optional) 2 teaspoons grated fresh ginger
1 clove garlic crushed 1/3 cup water
1 cup pineapple chunks fresh or canned (unsweetened) 1 cup pineapple juice or 1/2 cup apple or orange)
1 tablespoon sugar, cornflour and vinegar
Stir-fry red bell paper, carrots,snowpeas,ginger and garlic in a lightly oiled frypan for 3 mins. Add water and pineapple. Cover and simmer for 5-7 mins until vegetable are just tender. Stir in juice combined with sugar and cornflour and vinegar. Continue to stir over moderate heat until the sauce thickens.
