Denver Brunch Sandwich

Ingredients:

8 slice bacon
6 eggs
½ cup milk
½ cup mayonnaise or salad dressing
¼ cup chopped pimento
¼ cup chopped green pepper
¼ teaspoon salt
Tomato slice

Preparation Method:

1. Place bacon slice between paper napkin or paper towelskin 1 ½ quart (10×6) glass baking dish.
2. Microwave for 7 to 9 minutes or until bacon is crisp. Removed bacon; drain drippings; crumble bacon; set aside. Combine eggs, milk and mayonnaise in medium mixing bowl; beat well with rotary beater. Stir in bacon and remaining ingredients. Pour into baking dish; cover.
3. Microwave for 5 to 6 minutes or until center is almost set. Garnish with tomato slice. Let stand, covered, 5 minutes before serving.
