Personally, I don’t often eat salad, and I don’t know how to make vegetable salad either. I can only eat those vegetable salads or any salad when I am dining out or someone close to me makes it. Nevertheless, this time, I want to try this new found and easy to make (I think) Wilted spinach salad with some bacon on it using microwave (that I seldom use) because I promise myself that I would try to live healthy and eat plenty of healthy foods this year. I wish I could fulfill that promise. wink”
1/4 cup vinegar
2 teaspoons sugar
1/4 teaspoon salt
1/8 teaspoon peeper
1/8 teaspoon dried tarragon
1/2 cup slice celery
1 small red spinach leaves (torn about 8 cups total)
2 medium orange, peeled and sliced
1/3 cup cashews, coarsely broken
In 3-quart casserole, snip bacon in to 1-inch pieces.
Cover with paper towel
Microwave at HIGH (10) 3 to 4 minutes, until crisp
With slotted spoon, place bacon on paper towels to drain.
To bacon drippings add vinegar, sugar, salt, pepper and tarragon.
Microwave at HIGH (10) 3 to 4 minutes until mixture boils.
Stir in celery and onion.
Gradually add spinach to hot dressing; tossing to coat each pieces.
Add crumbled bacon, orange segments and cashews.
Toss again lightly then serve immediately.
Total microwave cooking time 6 to 8 minutes. Makes 8 to 10 servings.
Microwave cooking is perfect for me this time of the month because I am still doing self conversation if I would buy a new burner or not… LOL
